A 2 hour drive south from Fez up and into the hills. Fez is at 450 metres, but the crocus are at 1,500. winter snow is the best water for their development, though this year there has been no snow or rain. The coming October crop will probably be smaller than usual. Because they are the first to grow saffron in this region they cannot yet get any internationally recognised quality labelling (no DOC status, unlike Taliouine in the south) However the care they take in cultivation, but most importantly in harvesting, maturing and storing make this an incredible product. In October, for the harvest we will visit, do mail us if you would like to come for a Saffron day in the hills. SAFFRON CREAM - served in the garden. we use a 7 oz glass per glass 6 oz of whipping cream 1 level to rounded table spoon of white sugar, depending on your sweet tooth 2 medium egg yolks (maybe use the whites for a meringue) in the bottom a spoonful of jam, we use sweet potato (though apricot or even apple would be good) 1 large date with the stone removed, or 2 small ones scale up depending on the number of glasses mix the cream with the sugar and the egg yolks (mix them a little first otherwise they spin around in the cream mixture) put the glasses into a metal tray and pour in warm water, you need to cook them slowly otherwise you will end up with sweet scrambled eggs, the water needs to come halfway up the glasses. add the jam and then stick the dates into the bottom of the glass on the jam. gently pour in the cream and egg and sugar mixture, divide evenly between the glasses pre heat the oven to 180 c for the saffron I use whole saffron stamens, if it is fresh 3 or 4 per glass is sufficient, crumble onto the top of the cream once in each glass. bake in the water bath in the oven, have a look after about 20 minutes, if browning a little on top turn down the oven and leave for another 15 to 20 minutes. the cream should wobble but not too much. when cool they will be firmer. serve chilled. especially good with thin crisp sweet biscuits for dipping. voila. 10th Jan 2016 Razzet el Kadi - Najia is making this today to serve with Chicken Rafissa. essentially a flatbread dough made into noodles with the help of olive oil and melted butter, then fried. 29th Nov 2015 Sorghum growing in the garden.
